Rabbits can eat bell pepper, as it is high in vitamin C, which they can produce themselves, but should be introduced slowly to avoid digestive upset. Some kinds of bell pepper are high in oxalic acid, but the majority of oxalate in urine is produced by the rabbit’s own body.
